Need help with new gaming PC built around Dell 34" monitor ( u3415w )

I'm looking for a little expert advice for a new gaming PC build with a Dell u3415w 34" wide screen monitor. I've put together a list here:

Any feedback would be appreciated. This is my first new build in 3 years. I've bought the monitor and contemplating buying 2 970 GTX in SLI for 3K gaming (if that what 3440x14440 is called). I'm not sure if I should go with the new 6 core processors or the older 4790K. I'm open to anything.

I want to be able to play the Witcher 3 and GTA V at 3K with full graphics on, minus anti aliasing.
 
Your build is great. I am pretty sure that you will get what you want out of your PC. Everything looks great, but I don't know about the CPU cooler. If you have read trustworthy reviews about it and if you are pretty confident about it, then you should go with it.
