GPU (graphics processing unit) is the video chip. It can be integrated (nowadays typically built into a CPU, what AMD calls an APU) or part of a video card. That GTX 780 you listed is a very powerful GPU. A higher end GPU helps in graphically intensive programs - often games but also things like CAD drawing software, video editing, etc.
