So here's the thing
I upgraded from 8th to 12th gen, the latter being a kit based on Gigabyte z790 S Wifi ddr4 + i5 12400, i fresh installed a somewhat old windows 10 (21H2) and everything ran perfect, i manually installed mb drivers, latest NV driver (i have rather old gpu EVGA GTX 1060 6gb SSC), and was runnning smoothily and then...
...Windows Update happened
Upon required reboot the board POST beeped 5 times, didnt show BIOS splashscreen, but it did however start windows normally. I turned the pc off and carefully went for unpluggin and pluggin RAMs, GPU, drives and other peripherals, turned out the beeps only happen when i plug the gpu (whithout the gpu it runs as expected), so i booted in save mode and clean uninstalled the nv driver with DDU and upon pluggin the gpu again same 5 beeps POST happened.
My issue with this is, i dont think the gpu is faulty or the cpu (as 5 beeps POST in Gigabyte boards might indicate cpu problems) , nor other components like RAM or drives(cuz it runs well on them), my take it might be related to windows update made the mobo conflict with the gpu somehow, and that's what i wanna try to find out without having to CMOS reset or update BIOS, or should i better roll back updates or clean install a more recent windows like W11 24H2?

Welcome to the forums, newcomer!

You should've recreated your bootable USB installer for Windows 10, then installed the OS while all drives except for the one you wish to install the OS onto was disconnected from the build. You should also install the OS in offline mode.

Ideally, if I were in your shoes, I'd flash the BIOS to the latest version, then clear the CMOS, remove all drives except for the one I want to install the OS onto, then install the OS in offline(while CSM is disabled in BIOS), then install all necessary drivers in an elevated command, while in offline mode, i.e, Right click installer>Run as Administrator.

When posting a thread of troubleshooting nature, it's customary to include your full system's specs. Please list the specs to your build like so:
CPU:
CPU cooler:
Motherboard:
Ram:
SSD/HDD:
GPU:
PSU:
Chassis:
OS:
Monitor:
include the age of the PSU apart from it's make and model. BIOS version for your motherboard at this moment of time.

I sorta did what u recommended, although in a slightly different order ( trying to use the bios update as last resort). 1st i reset CMOS to no avail, then in BIOS and with the card unplugged i set the graphics to always start on the integrated, then i clean install a fresh windows( w11 24H2 Jan), then plugged in the card and plugged the hdmi cable to the card, ( even though it didnt have NV driver installed it displayed in the monitor correctly, although dxdiag recognized it as display 2, default Microsoft graphics driver was 1), then i installed latest NV game ready driver, and rebooted, this time the pc didnt POST 5 beeps, however it didnt show bios splashscreen( the span where it shows bios splashscreen and then the same screen with windows throbber loading),and windows loaded normally. Long story short, upon next reboot the evil 5 beeps happend again, and again the bios didnt show but windows did, then i used last resort, unplugged card so i could use BIOS and updated to latest bios version and CMOS reset, upon pluggin the card again, the hellish beeps happened again, and again windows loaded perfectly. So, am i doomed to only use my gpu in exchange for not being able to enter BIOS and to hear those annoying beeps everytime i boot?
Note: all softwares were installed manually and offlline, inlcuding windows
My specs:
CPU: i5-12400
Mobo: Gigabyte Z790 S Wifi DDR4 v1.1( factory BIOS F2 now F3)
RAM: 8x2 GSkill Ripjaw 2333MHz
GPU: EVGA GTX 1060 6gb SSC
SSD: ADATA 250gb
Monitor: VIT 19" LED 900p
OS: Windows 11 Pro 24H2 Jan 2025
PSU: Corsair CX650M
I bought the PSU back in 2018 and made it check and test with a technician prior to assembling the rig

I had something similar when I built my new AMD rig and was using my RX 6800xt. I tried updating bios etc, and it would boot fine with the 6800xt, no beeps for me, but I had a hard time entering the bios unless I was plugged into the integrated graphics. I later upgraded to a 7900 xtx and never had the issue after that. So it might be when you go to upgrade your card down the road that it resolves it, as the 1060 is a pretty old card at this point.

I get that but, how strange it worked perfectly at first but only after updates it started showing the problem up, in ur case 6800xt isnt even that old and still happened to u, how can windows update cause this hardware level type of malfunction?
