it showed all my old apps from before I completely restarted my pc anyone know why this happened? How did they come back?

In Windows, these tend to be labelled C:, D:, E: and so on.Can it also be that windows loads up with something called volume 2 ? ever since I restarted the pc it asked me if i want volume 2 or 6 im so confused on what that is i just went this volume 2.

If you still have issues, reinstall Windows on the SSD while the HDD is still disconnected. As soon as you have a working C drive, you can format the HDD to get some extra storage. If it still feels clunky after a complete reinstall on the SSD (without the HDD connected), then this particular drive could have a problem or a wrong configuration (for example, SSDs need the be set with the AHCI mode in the BIOS SATA options, if it is set as IDE you gonna be stuck with a HDD-like speed).

Do you still get the same error when you try to install the Nvidia drivers? Since you have done a clean install of Windows and, assuming you have installed the necessary drivers, the problem is persisting. I installed the GPU drivers and still seems choppy all the movement I do just feel awful sometimes like even scrolling on discord it looks like it's all tearing up.Going into the BIOS is not a big deal, I do it all the time. Just reboot and repeatedly press the BIOS key (you should see something like "press F2 to enter setup"). You may need to be quick.
But I didn't know your problem was visual. I though it was just slow like every time you try to do something it takes longer than it used to. If it's visual choppiness like some sort of screen tearing it's likely not the drive, but rather the GPU or even the monitor. I agree with PiersPlowman: try to install the graphics driver and see if you still get the error.
