Question PC sometimes crashes when opening things from HDD

So let's start with the specs :
R7 5800x (PBO 2.0: 18)
B450 Aorus pro
2x16 ddr 4 3000mhz Corsair DOM PLAT (Prime suspect, cuz they don't boot at XMP so I keep em at 2866)
RX 6800xt
SSDs: 1x256gb Viper vpn100, and a 120gb EMTec one (It stays unpluged cuz after being plugged for a while it goes nuts and messes up my pc)
HDD: 1x2tb barracuda
Superflower Leadex III 750W Gold
Phanteks P500A D-RGB
Soo. First off, it DOES NOT overheat, it has an 360 AIO and VRMs and all seem to have good temps.
The issue is not consistent, I cannot replicate it at will, in the reliability panel it shows up as an improper shutdown.

As a whole, I have no idea what's going on...

The PBO settings have proved themselves to be stable in basically every benchmark and game and the issue does not happen every day or even week, but when it starts happening, it happens a lot...
