Let see, Hardware companies I miss: Quantum, their fireball series of drives were top notch back in the day up till they were bought my maxtor. In fact a 10 year old 40gb quantum fireball drive, I had bought back in 98, is still alive and kicking in a low end computer I put together for a friends kids to use.
3Dfx, my first real 3d card was a diamond Monster 3d, literally ran it till it wouldn't work any more, which sadly was only a couple years. Also owned a Voodoo 2(back when Creative labs made 3d cards), Voodoo Banshee, Voodoo 3, and Voodoo 5 5500 card at different intervals.
Gainward, I agree with others on this one. Believe it was the Geforce 2 Ti 450 that I had that was made by them. Had that ah heck for years, right up until shortly after I got ahold of the GeforceFX 5600ultra. Then it went into a friends computer and kept on truckin for a while longer.
STB, back in the day before 3dfx bought em up, they made some of the best, and best supported voodoo, and voodoo 2 cards with their Black Magic series. Also one of the earliest companies to stylize the black PCB with their products.
Software:
Interplay, made some really good memorable games. Descent, Descent 2, Descent Freespace 1 and 2. Starfleet academy. And along with Bioware they released Baldurs Gate PC version.
Parallax Studios, the main company that designed many of the interplay games. Same for Black Isle Studios.
WestWood Studios, what can I say..... Some of the earliest games I played on Atari/Commodore were by westwood, and almost all their games were good. Not to mention they brought us C&C.
SSI, and Microprose, what ever happened to these 2? They use to make some decent games and other programs.

I miss games created by pre-sell out: Activision, Westwood Studios, Origin.
Games franchises such as Mechwarrior, Dune, and Ultima.
I miss the Game Port (15pin midi interface), have a useless midi keyboard and several MS Sidewinder gamepads and joysticks that can't play with modern hardware.
Also miss socket 939. Kinda mad that it was phased out before it's time. I always wanted to upgrade my Athlon 4000 to a dual core x2 for the price of an AM2 CPU.

Abit......they made awesome motherboards that gave you good control right down to being able to thermostatically control all of the fans in your case. I have not been able to find a good replacement yet. Hell, even the DFI lanparty boards lack this feature. UGURU ROCKED!
Ensemble studios.....I have owned every Age of Empires game ever released. It is with-out a doubt my favorite game series. I was shocked when MS closed the doors on Ensemble Studios.

Black Isle first and foremost, many great games with a lot to offer even today. Even today I'd say most of my favourite crpgs carry their name.
Also Bullfrog, Origin and Westwood come into mind (and wonder that they 3 have in common...)
On the hardware side definately 3dfx, diamond and commodore, if only amiga would have had the chance to grow and evolve as computers did in general!

I still have three C64's, two C64C's, three Amiga 500's, one Amiga 600 and a CD32 + a mountain of stuff for those (mouses, joysticks, PSU's etc)
And they don't just sit on my closet gathering dust, I still use them on a weekly basis!

Aureal, Hercules, and Valkyrie Studios. Aureal was the only real competition to Creative and had superior audio technology at the time. Too bad creative bought them out since it would have been nice of Hercules to continue the brand and technology, but they couldn't come up with the cash to outbid creative.
Even though Hercules/Guillemot is still around they are just a shadow of their former self since they stopped being an AIB for ATI and nVidia. I remember being envious of the legendary Xentor cards back when I had my old Creative TNT2. Their Kyro2 cards were a very good value product and I was disappointed when they didn't work well with my old Epox MVP 3C2 board when I was looking to replace the TNT2 card I burned out ^_^ (which is the first and only card I've burned out by trying to overclock it). Now they are just a shadow of their former selves selling nich speaker and DJ products.
Valkyrie Studios is the developer that made "Septerra Core: Legacy of the Creator" and what an excellent game it was. Their following game "Seraphim" just never seemed to pan out unfortunately.

As far as dead companies go, Quantum, Sega, and Commodore. I have an old 2.1Gb Quantum that still works (boot drive for my dads computer which was the first pc I ever built, 200MHz Pentium Pro... He just plays freecell on it and does e-mail) i was a big fan of Sega's consoles, wish they had stuck around in that department, and I have a commodore 128 that I play with from time to time.
I miss Flying games like the Descent series including freespace, they are awesome games, and I really want something new to play that I can use my joystick on. Someone should make a Descent 4, and Freespace 3. I would buy it, just do a good job making it.
And Last but not least, Toms Games as a whole (especially Second Take) I would have preferred they just take down Toms Games all together than turn it into one of the lamest flash sites in history, at least that way it would have left with some dignity.
