Question quad ram stick vs dual ram stick performance in games

I plan on buying an i7 9700k and the spec sheet says it only supports dual channel memory but when I look at benchmarks, 4 ram sticks gets around 20 fps more in games when compared to dual ram sticks.

Is it safe to say quad ram sticks running running in dual channel will have no instabilities? What there be problems if I were to oc ram?

(I plan on buying either a 4x4 Corsair Dominator Plat 3000 kit or a 2x8 kit

Where are you seeing those benchmarks? There is no reason performance would be any better on a dual channel system that used 4 stick vs 2.
