So I'm planning on upgrading my build but I don't know what should I buy. Here are the options

1- Ryzen 7 1700 - US$330
ASUS Prime X370-Pro - US$159
EVGA GeForce GTX 1080 SC GAMING ACX 3.0 US$475
HyperX FURY Black 16GB ram US$119
EVGA 600 B1, 80+ BRONZE US$49

or

2 - I7 7700K- US$300
MSI Z170A SLI Plus - US$90
Corsair Liquid CPU Cooler H60 - US$64
EVGA GeForce GTX 1080 SC GAMING ACX 3.0 US$475
HyperX FURY Black 16GB ram US$119
EVGA 600 B1, 80+ BRONZE US$49

As you can see, they're both at the sime price range, so if you could help me, that'd be great. Keep in mind, the main reason for this build is for gaming at 1440p.

If you're almost always using it for gaming then defiantly spend less and get the i7-7700K, it has slightly better gaming performance over the 1700. That said, if you do a bit of editing and rendering then the Ryzen 7 1700 will benefit you and make this faster. Also, i would get a slightly better Power Supply if i were you it's a good brand but lower tier series. Go for something 80+ Gold and 550w or higher if you can preferably from Corsair, EVGA, SilverStone or XFX as they are among the most reliable brands.

If i may interfere on the subject since i am curious about it: people have been saying the ryzen is good if you game but also render and edit. But there have also been a fair amount of people arguing that you're gonna lose the battle with a 4 core cpu considering games are actually starting to use more cores ( some games are already on the way) isn't the 7700k less of a choice in that regard

AMD is working with developers to get Ryzen optimised for Games and it is indeed better at most workstation loads like Rendering. But if you are primarily Gaming with very little anything else there isn't much point picking up the Ryzen 7 based on assumptions it may come better. You'd be paying for a chance of a better CPU whereas the 7700K you are guaranteeing yourself the strongest Gaming CPU on the market right now and it's hardly going to be weak for a long long time yet.

That's a pretty easy choice, to be honest. The i7 is much better than the Ryzen. End of. It's one of the best CPU's on the market. The Ryzen isn't too far behind, but seeing as the prices are similar, I would go for the i7.

Hope this helps! :)

The R7 1700 actually costs 30 dollars more, so the i7 would be better for a budget, surely...?

I already said that was the better option.. Only consider spending more on the Ryzen if you were doing a lot of multi-threaded applications like Rendering which is where the Ryzen outperforms the i7 7700K in 9/10. But for Gaming, yeah the i7-7700K all the way.
