I go into the control panel and try to make a new storage pool to make a RAID 1 with a 1tb and 2tb hdd, but it only lists one of the hdds, so I cannot use two to make a storage pool.

^^^^^ That image shows you what I see when I try to add two drives to a storage pool and only my 2tb hdd shows up.

Solution

RAID 1 with a 1TB HDD and a 2TB HDD = a 1TB RAID array.

And RAID 1 is significantly different that Storage Pool in Windows.

So is there a way to RAID 1 two hard drives (1tb raid 1) in windows?

Standard mantra...."RAID 1 is not a backup".
It helps only in the case of a physical drive fail. Accidental deletion, corruption, virus....with a RAID 1, that just happens twice.

For data redundancy, so I can store a backup of my data on two+ drives which is easily editable.

What do you mean by "easily editable" ?
You, the user, only sees a single drive. The RAID controller does all that stuff behind the scenes.
