Looking to upgrade my graphics card with a budget of ~$500. Will be used mostly for gaming in games such as Destiny 2, Valorant, Risk of Rain 2, and games like Cyberpunk when that comes out. Will also be used for VR whenever Valve gets things going. Currently running a GTX 1060 6Gb with with an EVGA Supernova 650 G3, Ryzen 5 3600, 16GB of G.Skill Ripjaw V 3200.
The two GPU's I'm interested in are the Gigabyte RTX 2070 Supers:

Or the ASUS STRIX RX 5700 XT:

I'm currently only running 1080p but would like to be able to upgrade to 1440p with higher refresh rates with a better GPU.
I know the 2070 Super is the better card, but they are all either out of stock or the prices are inflated. Is it worth waiting for the prices of the 2070 Super to return to normal, or is the RX 5700 XT close enough that the difference is minimal. The main things that have me leaning toward the 2070 are ray-tracing and the fact that I've heard so many things about the RX 5*** series being super unstable in terms of thermals and drivers. Again does this warrant waiting on the 2070 Super, or am I just being over anxious and the 5700XT is the better option? Thanks for any help!
