Will my be quiet pure power 11 600w be enough for this config?
Cpu: i5-6600k with be quiet pure rock
Mobo: asus prime b250m-plus
Gpu: asus rtx 2070 super
2x8gb gskill aegis ram 3000mhz
2xhdd (one 5.4k, one 7.2k)
Intel 760p 256gb ssd
And 5fans
And if it is enough I heard that this psu is bad when it comes to transient loads can that damage my gpu?

Yes, the PSU is sufficient for the config you have for the 2060 Super (you have 2060 Super in title and 2070 Super in body, by the way).

The 2070 Super calls for a 650w PSU (from the previous links). Your current PSU may handle it, but you should think about a stronger PSU for long term use.
I will upgrade but I just wanted to know if it will be good for a month or two to use it with
