I currently have a Ryzen 5 1600x and a GTX 1050Ti. My CPU's still holding pretty good in most newer games, but the GPU's been pretty bad lately, so I'm thinking of buying a new one, specifically an ASUS ROG STRIX RTX 2070 OC. So my question is, should I stay with my Ryzen 5 1600x while buying a 2070?

Yea, absolutely. The 1600x is a very capable gamer, and with a little OC it will push even more FPS. it will run your new 2070 just fine.

I've my 1600x OC'ed to 3.9ghz. It runs like a dream. I play CPU demanding games, and it runs them smooth as butter. You will have a huge boost in FPS with the 2070.
