What is the maximum display supported by 5 Gbps USB-C DP? Is it 10 Gbps unidirectional? I guess it would support somewhere from 1080p60 to 1080p120 uncompressed without any trouble.

From what I saw with a quick Google 5Gbps is enough for 4K@24hz

More than enough to not be a problem when powered by a steam deck GPU would be my suggestion.
You will be limited by the Steam Deck GPU before you are limited by the dongle only being 5Gbps
but 10 Gbps would have been nice

Only the simplest games are gonna work at 4K, but the Steam Deck APU can probably handle 4K/8K60 video decode, H.265 and AV1.
