What PSU do I need to run the Sapphire RX 7900 XTX Nitro+ with an i9 14900K?

Will my current Corsair RM1000i Gold from 2018 be sufficient?

Yes, but really overkill, in terms of wattage.

Your current PSU would most likely power the system reliably, but I do feel that if you're spending this much on a new GPU, it may be worth upgrading to something new as age can derate PSUs.

Hx1500i will work fine if you can afford it

You don't need to replace your RM1000i that came with a 10 year warranty. That PSU is totally fine for your setup and you can use it for a couple of more years. Replacing about a year or 3 is early enough except if you upgrade the GPU to an upcoming high-end nVidia that needs two 12v-2x6 pin connectors.
