I got and installed a new SSD ( Samsung 990 Pro , PCLe 4.0 NVMe 2 TB ) , My operating system is on my old SSD ( ssdpeknw512 , PCLe 4.0 NVMe 500 GB - Should I move OS windows 11 to the new SSD

You would see exactly zero performance difference.

If the current 500G drive is running low on space, address that issue.
But unless the old one is faulty, there is zero reason to move things.
