I recently bought my EVGA 560 ti a few months ago and play at 1680x1050 resolution... For christmas I will be upgrading to 1980x1080 resolution.....I read a lot of negative things about sli and crossfire that has me worried to purchase another 560 ti I am hoping to max out current games and future games down the line and wondering if its worth the jump
Looking for any kind of feed back

I max at everything I play with dual GTX 260s at 1920x1200. Lol you will be fine with with dual 560 Tis. The only "problems" that can arise is micro-stuttering, and that is supposedly barely noticeable when it happens... I've never seen it happen myself.

Actually most people confuse normal stuttering with microstuttering, and as said by heltech the problem is barely noticeable with high end GPUs such as GTX 560ti and HD 6950.
Regarding the GTX 560ti in SLI, 2 GTX 560ti in SLI beats the perfromance of a single GTX 580 specially in 1080P and your CPU is strong enough to handle them.
