I am looking for a cpu to complement the rtx 2080 ti that i will be using in a new build in the months to come. Currently i have selected the ryzen 3700x. What i will be using it for is for gaming yes but also some video editing and programming. I have looked around several different forums and many of them recommend i7 9700k or i9 9900k and i am looking to make an amd build this time around. Some of the threads mentioned that going for the 3900x would be better. Any suggestions?

If you do advanced multitasking then the 3900X would be optimal. But if you don't need the absolute best in the game, the 3700X will also be excellent. If the usage is predominantly gaming, the 3700X is more than enough and also is good at multitasking on the side.

For some perspective: I currently mostly game and do some multitasking on the side, and I use the 3600X.
