specific scanner software

I'm looking for a scanner program that lets me:

o scan something in really quickly, and with one click file the
document in a category
o view list a list of scanned documents on the left in a given
category while seeing a preview of the selected document on the right
o move the order of documents up and down in a category while in
preview mode
o jump between fullscreen mode and preview mode by pressing
space-bar or something
o zoom out to full document view, or zoom in on a specific position
but remember the position when jumping to the "next" or "previous"
document. This would be handy for looking for specific documents with
text that doesn't change position, such as dates
o gif like image compression

If anyone knows of any programs that come close to or can do the
above, I'd be interested to know.

Are you referring to a "list" of documents that are currently being scanned
or is that "list" some kind of database of previously scanned and
categorized documents?

Yep, a list of already scanned documents.

Ideally, a really simple program which is really quick to use. But
these documents would probably ideally be stored as gif files on the
filesystem as I want to be able to just burn them on DVDs later. This
would also be future proof should the software no longer work on
future operating systems. I've got shoe boxes full of letters, old
collage notes, bank statements, news paper articles and it would be
good to just wizz through them (scan them) so I can throw out these
shoe boxes (and have piles of DVDs instead) just to give you some
background.

Maybe I'm being too fussy with the requirements now, I dont know. I
don't need burner functionality, but it would of course be a plus.
