i have a samsung galaxy s2 i like to get a blue tooth
headset for the cell phone i like to no if their any way
to use the headphones blue tooth devices alone with out
having any other blue tooth devices connect to my phone
and not have blue tooth file sharing open

Unlike TV shows, people cannot easily hack into your phone using bluetooth. When you enable bluetooth that may expose you to certain hacking risks, but these realistically won't happen unless someone is specifically targetting you and has a fairly high level of sophisticated software.

Also, bluetooth has a relatively short range, so you cannot be hacked from long distance; the hacker must be standing very close to you where you would notice him.
for your phone to connect to your bluetooth headset, you will have to at least enable bluetooth on your phone. You do not have to have discovery enabled after pairing your device for the first time, however, and I am not sure about what you mean by file sharing.

I guess you are just concerned about your privacy when using bluetooth?
