Think I've totally messed up

I'm a total noob when it comes to pc I don't really know what's good or not I had a gtx580 evga 1.5gb sold it because temps wasn't great and didn't really like the fan so I sold it and bought 2 6950 2gb iceQ to crossfire but now the problem is I'm not sure if my psu is that great its a 700w ocz stealtXstream will it handle crossfire and have I made a big mistake

Without knowing how many fans you're running, watercooling pumps, leds, fan controllers, etc . . . I'm gonna say you're good. 550-600w psu will run the components you listed.

No mistake there, fortunately. You are fine except that the 700w ocz stealtXstream only have 1x6PIN + 1x6+2PIN which is good enough only for 1 card. But you can use the MOLEX to PCIe converter that usually comes with high powered graphics cardfor the 2nd 6950. I powered 2x6950 like that using a corsair HX620W with no problem.
