I built my PC around about 2 years ago and i have added a few small components since. Here are the specs
AMD FX-6300 3.5GHz 6-Core Processor
be quiet! Dark Rock 3
Gigabyte GA-970A-DS3P ATX AM3+ Motherboard
Kingston 8GB (1 x 8GB) DDR3-1333 Memory
MSI Radeon R9 280X 3GB TWIN FROZR Video Card
bitFenix Neos Black/Red ATX Mid Tower Case
Corsair CXM 750W 80+ Bronze Certified Semi-Modular ATX Power Supply.
and I am planning an approximate sub £500 upgrade. What would you recommend me do for high end 1080p gaming and some moderate video editing?

I'd recommend, first of all, switching that GPU to a stronger one. If you wanna keep with AMD you can use the RX 480, otherwise, go with the GTX 1060. Both are great for 1080p gaming, if you plan on gaming at 1440p later on, a GTX 1070 will be a good choice.

Although not upgrading your game performance, i'd switch that PSU to a better quality one, Corsair CX series isn't the best choice as it's parts are made with not-so-good quality.

A good SSD will help your loading times be much faster too! Getting one should help your FX last longer.

Getting another RAM stick might help also! Normally, i'd suggest buying them in a pair, but as you've already got one, buy a new 8GB stick with the exact timing and frequency from Kingston. That way...

For now, these are good upgrades...
Later i'd switch the MOBO + CPU. If you wanna keep costs, a i5 6500 and some LGA1151 MOBO + DDR4 RAM or for real improvement a i7-6700k ( just be sure to get a MOBO with a good overclocking system.). With that you'll have muuuuch more power than with any AMD CPU
