Question UEFI Issue

I've never seen this before in my years in IT.

I have an older ASRock AB350M where the UEFI interface went haywire. I'll post a pic below.

What I've done to this point:

1. Updated the BIOS
2, Reset UEFI to default settings from inside BIOS
3. Pulled the MOBO battery for about 10 minutes

I really can't come up with any other ways to troubleshoot this problem. It wouldn't bother me too much if I could navigate but it's just 'stuck' like in the pick below. No mouse, no up down arrow. I have three separate drives on this PC (Windows, Mint, Fedora) and prefer hitting F11 to enter UEFI if I don't want to go into the default OS.

Any ideas are welcome. Thank you.

 
Is it just the boot selection that is like this? You mentioned you were able to reset the settings from within the BIOS, so I'm assuming that he setup utility works fine?

This is just going out on a limb here, but some Asrock boards, especially from this era have a setting which changes the resolution of the setup utility. This may be called "Full HD UEFI" or similar. Try toggling this.

Yes, it's just the boot section. I can get into BIOS just fine. I've tried toggling the "Full HD UEFI" on and off with no change.

Weird stuff. I wouldn't even care too much but I can't get into Linux and I'm used to using Windows only when necessary.

Does it BOOT to default OS ? I'm not sure about Linux but in Windows you can make BOOT menu, If Windows are default BOOT device, with a BOOT menu you can chose which OS to actually run.
Menu you can make manually in msconfig.exe or like me use EasyBCD to help you set up multi boot.
PS, F11 boot menu doesn't work on my Asrock either.
