So my pc has been having some werid issues that started with a failing m.2 ssd which has been replaced but while that fixed alot of issues have still been having problems, after many installs of windows 10 still been having issues and lots of blue screens even during windows just downloading updates have since gotten a new motherboard cause my previous mother board a asus prime x370 pro has been showing its age not really recieving updates anymore so have now got a msi mpg b550 plus which has been working fine, fixed alot of problems by installing windows again but this time without having any of my other internal drives connected, just the blank drive for Windows to install to, and that was the first time ive installed Windows in the last 2 weeks where it was able to completely download all updates and install them with out blue screening,

Now my only issue seems to be when i play a game no matter how light for testing ive been playing oxygen not inculded but get the same result, works for so long then the system locks up and the greaphics seem to vanish now thats only after maybe 5 mins of playing but the strange thing is ive had the system run aida 64 stressing cpu and ram left it for around an hour no problem, then did a fur mark run for 1 hour 30 mins and again no problem there no crashing and temps where perfectly fine accross the board, At this point i am at my wits end and could really do with some advice.
thank you

System specs are as follows:
ryzen 5 3600x
evga gtx 3080 XC3
16gb ddr4 crucial ram 2400mhz non xmp
msi mpg b550 gaming

You forgot to include the make and model of your PSU and it's age.

after many installs of windows 10
Where did you source the installer for the OS? You should recrate the bootable USB installer to rule out any corruptions in said installer.

was the first time ive installed windows in the last 2 weeks where it was able to comepletly download all updates
You're advised to manually install all drivers necessary for your platform and install them in an elevated command, i.e, Right click installer>Run as Administrator. Most often the OS will download the wrong drivers and then cause BSoD's, right, left and center.

Tried following the stuff on the sites looking at that issue and looks like things are working again but end up the same either that blue screen or a lockup with a glitchy screen everything tends to point towards the ram being the issue but the ram
