In an effort to delay spending on an entirely new build I’ve made the decision to upgrade my current gaming rig. I’ve purchased a 5700x to replace my 3600x. I have updated my bios to support the new cpu. My question is should I just update to the absolute most recent version or just stick with the one I have updated to?

Which motherboard and which is current BIOS version ? Look at BIOS version list and see what newer versions bring. Some times it's improvements with memory and other parts like PCIe and/or USB or just some bugs fix, or possibly for x3D processors for which you don't have any need to upgrade. Also make sure to upgrade chipset drivers to enable windows to actually use eventual improvements in BIOS.

So I’ve got everything working. Thanks for the reminder of chipset drivers. I suppose I’ll wait to update to the most recent till I upgrade again or have problems down the line. To answer your question the board is an Asrock B450 itx fatality. I’ve updated to version 4.20
