The best choice would be the 12600K but as other posters have suggested, the platform is expensive and probably wont fit into your budget. What you have is a very nice selection with a nice board and sure to be very impressive relative to your current Haswell build. However my two cents is 8 cores will last you longer and will be of benefit if you do any multitasking or want to play games at high refresh rates. Therefore you may find that it doesn't cost you any more in the long term.

An 8 core option to consider that might fit into your budget would be the 11th gen intel.

The i7 11700K might not be too much of a stretch for you at 342 euros and gives you similar performance per core plus 2 extra cores...
upgrading from 4th Intel i want some better performance from it because it's becoming slower over time dont know why

Ah fair enough - the parts you have selected should give you a nice jump in performance, also worth looking at the Intel 11th gen stuff (which is ~ on par with Ryzen 5000 in performance and usually a bit cheaper so might be good value). Intel 12th gen is the fastest (per core) you can get at the moment however it is pricey when you look at the whole platform.

You can stick with the memory and SSD you have already chosen. One disclaimer though which may influence you, the 11700K does require a more powerful cooler than the 5600X.

Update - I didn't pay full attention to your prices. I couldn't see a board for 240 that was any good, are you able to tell us what model it was? If it isn't super basic then the 12600K and a board for 240 is worth it in my opinion.

Is this a worth upgrade for the time being or should i wait some more time and go for the 12th Gen or maybe wait for the next Zen currently have around 700 eur
I found the i5-12600K for 299 but there is no motherboard cheaper than 240 what should i do
The Intel 12 gen locked cpu's and B660 boards are due out at in less than two months from now or if you want to purchase sooner another option is the Intel 11 gen cpu's with a B560 board.
