Prices for an RTX 3070 and RTX 2070 Super are too close to warrant the 2070 Super. I'd wait for the 3070. Better performance for == $$. Waiting is the hard part.

Very nice equipment. The RTX 3070 is claimed to perform similar to a RTX 2080 ti for half the cost. With the monitors you have you may want to consider the RTX 3080. Worth looking at while you're waiting on a 3070. Should make for quite a system.
