I'm considering upgrading from a 1080 to a 2070 super, is it worth it or worth waiting for the 3000 series?

Very nice equipment. The RTX 3070 is claimed to perform similar to a RTX 2080 ti for half the cost. With the monitors you have you may want to consider the RTX 3080. Worth looking at while you're waiting on a 3070. Should make for quite a system.
