using nintendo switch with a laptop and/or touchscreen only controller

hi all

i have horrible neuropathy in both my arms 24/7 and i cannot press buttons without pain.
is there a way i can play the nintendo switch (animal crossing when it comes out, only interested in this tbh)...with my laptop or some third party controller that is only a touchscreen?

does it just mirror the switch screen to my laptop or would it let me use my touchpad?

That link is just to a wireless adapter for controllers, it does not do anything for the screen. The switch does have a touch screen though, can you control things that way?
