I would like to vertically mount my GPU so it better fits in my case. Also would be more aesthetically pleasing. The extension for the PCIe won't work with my current x570 slot settings. A potential workaround is changing the output in the BIOS back to PCI3. Would this be worth it for fit and appearance, or would I be sacrificing a lot of performance?

You can test the performance both ways and see if performance suffers. I doubt it will very much.
I used a riser cable I found on Amazon by LinkUp. It is PCIE gen 4 and it does work as Gen 4 in my x570 build. ymmv on that I suppose.
