What does it mean Max number of memory channel

Hello. I bought today Intel 6900k, Asus deluxe ii mob, and crosair 2400 128 giga of ram 8x16.

The system will be compiled shortly thru the local shop. I was shocked when I read about 6900k specs that say Max number of memory channels is 4 and I bought thru the computer shop 8 ram cards / slots not 4. Did I void the CPU warranty when I install 8 ram cards or sticks or whatever they call them into the motherboard?

Ram doesn't have "channel support" so there is no such thing as limiting it. As long as ram works, it will be in however channels the memory controller supports. You may not need to bump up voltage.

There is no way an 8 core cpu is going to hit 5ghz.
Memory channels are different than memory slots. Multiple sticks can occupy the same channel. Whether all 4 channels are even occupied at all is up to the RAM and the motherboard. Each will need to support 4 channel memory.
You might need to bump up your RAM and northbridge voltages to run 8 sticks stable.
 
No you're perfectly fine. There's no RAM right now that supports more than 4 channels that I'm aware of, and even if you did install RAM with more than 4 channels the CPU would just limit it.
In my system, the processor supports 2 channel memory. I can still run 4 sticks of RAM fine.
