What graphics card and how many would i need for 1x1440p for gaming and 2x1080p, 1 either side for multitasking like video editing and browsing. I know it would take 2x980 ti to keep high fps for gaming on ultra settings for the 1440p monitor but would i need another 980 ti for the side monitors, obviously the side ones wouldn't need anywhere as much graphics power as the middle one

Whats your budget? If you have that many screens going, it might be better for you to get a single card with lots of vram. You don't really need 2 980tis because a single card can run them without problems if you are only using 1440p monitor for games while the 2 1080p are just for background browsing. As an alternative solution, you can go for R9 290X 8gb edition, because it gives you plenty of vram and more than enough horsepower to run your setup, since the 290x can run 6 1080p simultaneously.

i would rather stick to nvidia, 2 980 ti's will give me very good frame rate on the 1440p monitor and will be perfect for what i need, thankyou tho :)

You really don't need 2 980ti's. And I hope you realize the fact getting 2 gpus doesn't mean doubling the vram, because thats not how it works. And not all games works on sli solutions.

Yes i know about the sli part but what do you mean not all games work on sli solutions? Does that mean some games can only use 1 graphics card? I know that the games i am interested in getting can use more than one graphics card

Yes that means some games will only work on 1 graphics card. Because in order for SLI to work, Nvidia needs to work with the game developers so that nvidia can release the drivers for dual gpu solutions. This is why having a single card solution will be better than 2, especially if you are only gaming on 1 monitor than all 3.
