[SOLVED] What power supply should I use? (Need help asap)

Hello everybody here on this forum! I need some help on what PSU I should choose for my new pc build. I'm planning on overclocking both the GPU and the CPU (the first time overclocking the CPU, btw). I will use the pc for gaming and gaming only. Is there anything that I could change to make it have better performance? The budget is around 3200 US dollars or 30 000 in Sweden's currency.

Specs:
Intel Core i7 12700K
ASUS ROG STRIX GeForce RTX 3080 Ti OC 12GB (Price of this is half of the budget)

Corsair 5000D Airflow
MSI PRO Z690-A DDR4 (Good enough for overclocking?)
Corsair Vengeance RGB PRO 16GB (2x8)
Samsung 980 PRO Series 1TB M.2
Seagate Barracuda Compute 2TB
EK Water Blocks EK-AIO Basic 360 (Should I use the ASUS Rog Strix LC 360 Liquid CPU Cooler instead?)
Corsair iCUE QL120 RGB 120mm white x3 Incl. Lightning Node Core (Yes, I will buy more fans in the future)
PSU: ASUS ROG Strix 1000w (Will I be fine with 850w? (Maybe the Corsair RM850x V2?)) Is 850w enough, or should I use a 1000w power supply?

Any good CPU overclocking tutorials?

As spiky as RTX 3000 is, I would choose a 1000w unit. The 3080ti is not worth the added cost, vs the 3080 12gb. Overclocking really will not garner you much performance, but if you want to overclock that CPU, I would maybe go up to the Z690 tomahawk, or Asus Z690 tuf. PCPP is kinda limited, in some areas, but this how I would build it, with your budget, based on what I can find, on PCPP.

If you don't want to mess with overclocking while saving money then this cpu down below nets you similar results as the 12700K yet uses less power and creates less heat. You can pair it up with a decent B660 board. 850w psu + RTX 3080 Ti and you're good to go.

I have one more question, I want to overclock my GPU, and the Asus TUF OC isn't the best for that. So I feel like it's worth it to get the 3080 Ti refurbished for 1600 Dollars or 15 000kr. I cannot find any 3080 12GB that isn't the ASUS TUF OC that is well suited for overclocking. The ASUS ROG Strix 3080 Ti 12GB OC is perfect for overclocking. Correct me if I'm wrong here; overclocking a GPU like the Asus ROG Strix one with excellent overclocking capabilities will make a significant difference when gaming.
 
GPU overclocking is not worth it, for the power and heat it will produce.

Z690 is mandatory, to overclock the CPU. Honestly, I don't feel it is worth the added cost, heat, power usage, and potential instability. As you can see here, at 1080p, the differences between the 12700, and the 12700kf are minimal. Even the i9 12900k isn't much better. Running at a proper 1440p or 4k, with your new rig, the difference would be 0. If you want to overclock, just to play around with, that is fine, but you should be aware of price/performance hit you take, by doing so.

Z690 allows for overclocking both the cpu and RAM and the B660 boards only allow for overclocking the RAM. With that said the B660 boards allow for running locked cpu's with the power limits off and that's good for an extra 3 - 5 fps on average.
