Question what to choose

I am trying to build a gaming machine should i go with 2x xeon x5675 lga 1366 or 1x i3 10105f lga 1200
and lga 1366 is ddr3 but lga1200 is ddr4 which would be better my current system is ryzen 5 5600h

the reason i want those options is because i want to move from laptop to desktop and/or possibly use the desktop as a server and i have heard that dual xeons are very powerful

why budget is not 200 it is more like i will buy parts slowly and i want to use it for a game server but also have it be usable for being a regular gaming computer and i want to know if an i3 10105f ddr4 or two xeons x5675 ddr3 would be better

Not so much.
The Xeon has 4 processing threads and a total passmark performance rating of 6409. Times two if you have a dual socket motherboard.
The single thread rating which most games depend on is 1479.
That does not get doubled:

Why not try to find a ryzen 3600 or similar paired with an old motherboard. For example I’m running an old AsRock ab350 pro 4. Until recently I was running a ryzen 5 3600 in it. I recently upgraded on that board from 5 years ago to a 5900x. So you could maybe pick up a b450 with a 2600 or 3600 that can be updated later.

That's if all things are equal which of course they are not, Xeon were designed by Intel to be used in server, workstation environments. They are great chips but it's a bit like comparing a tractor to a car. Both are 'powerful' but one is designed to pull a large weight (the Xeon) and one is more designed for straight line speed (consumer CPUs)
I'd also look at the games played - not all games access the second CPU
