How do you find a local sport that enough people (adults that is) actually want to play? Assuming that no nearby gym or park hosts any events? Or possibly find some other outdoor activity that accepts new members? Assuming searching on Meetup or simple Google searching hasn't landed you any results but local Facebook groups don't mention anything, what are the key words I'd be searching for? Like if I want to decide which sport(s) to train up on?
Search local athletic groups plus your zip code. Check out your local YM/WCA (if you have one). Take up a trial offer from a local gym and talk to people. Again, be proactive!
Translating that to the gaming environment:
"Search local athletic groups plus your zip code."
"Look up gaming groups of various sites."
You did that,
"Check out your local YM/WCA (if you have one)"
"Check out your games forums for LGF posts"
You did that.

If there's a free trial for the game you want to play then download and install that. Get somewhat proficient with the game and then talk to other players so they know that YOU know what you're doing in game. That might entice them to offer you an invitation. Ask questions about specific scenarios that other players may have come across and they will be more likely to respond.
Finally, as a potential host, these are the challenges you face:
1) You don't own the game.
2) You've never played the game.
3) I don't even know you. How are you a positive addition to my team?
IMO, your best bet is to form your own group from other posters in the LFG pond and tell them you're forming a new, playing group. If you keep running into the same players around the same time, then ask them if they want to be part of a regular group.
