Why are there video outputs on MB without graphic processor?

Everyone here probably knows, but search turned up nothing.

The boards I have been looking at without any graphics still have VGA, HDMI connections?

The majority of desktop processors have onboard graphics. If you're using the graphics from your CPU, you use the interface from your motherboard.
Yes. Any motherboard that has VGA, DVI, or HDMI has onboard graphics build into it. It just uses more of your CPU and RAM to process, it's called integrated graphics. Some CPUs come with internal graphics built into it like the i5/i7 sandy/ivy bridge. It just gives you more graphics power than the onboard does. A video card has dedicated Ram and Processor.
