Almost identical monitors ... IPS 32" panel. Same native resolution and pixel pitch.
What makes the Ultrasharp cost so much more? Is it the 1% better color gamut?

Look through both panel's color calibrations, the Ultrasharp's are designed for professionals in the content creation industry. I've worked with Ultrasharp's in the past and they are very accurate to what you see when dealing with print media. To add, more like 3% for DCI-P3 and 1% for sRGB as well as Rec 709. Then is the contrast ratio. They are the same resolution and dimensions but not the same panel.

If you're gaming, you would be interested in frame rates, response times and refresh rates, not color accuracy.
