I was wondering if it will bottleneck (specifically at 1440p but also 1080p) and if I can run the 3060 TI on 500w 80+ GOLD (without overclocking).

My PC parts are:
CPU: Intel I3 10100 + stock cooler
Motherboard: ASRock B560-ITX/ac
RAM: Corsair Vengeance LPX 16GB 3200MHz
PSU: Be Quiet! Pure Power 11 500w 80+ Gold
SSD: Samsung 980 500GB
HDD: Toshiba DT01ACA100

Solution
From experience going from gtx 1070 to 1080ti on an overclocked 2600k (4.5ghz) system showed significant gains, 20~30fps more in games i played at 1440p. Games such as Dying Light, Farcry 5/New dawn, Ghost Recon. Such a dinosaur of a cpu with overclock was good enough for 1080ti. Id say you'll have no issues getting the most out of 3060ti which is bit faster than 1080ti with a modern processor. But as Phaaze88 said, being at the mercy of software, games that can utilise more threads might suffer somewhat, but 3060ti won't be the cause of that.

Psu should be fine but yeah your gonna be limited by the CPU
