i bought a new samsung ssd and i want to migrate my OS to it from a 1 TB hdd. When i migrate, will the program delete all of my excluded files which i dont want to migrate from my HDD ?

Solution

The delete volume option is greyed out, also, to remove the drive letter off the E partition all i have to do is use the "change the drive letter and path" option and remove the driver letter?

Yes.
But you might as well just have the page file on the SSD.

oh, i read somewhere that if you have a page file on your SSD, it can kill the SSD quicker because of more disk writes.

5+ years ago, that may have been a concern.
Current SSD's will outlive you and I.

Ok so I formatted the HDD, how do I set up folders on the HDD to store programs/games?

For Steam, you can designate any drive or folder for game installs
In the steam client:
