After learning a few things about you, I think you should be looking at ryzen 2600 more.
As just some advice that I can give you is that, the 8600/8400 is a great cpu, but the i7-8700 or ryzen 2600 will be a more versatile cpu. The 2600 is a great value and is cheaper to run, able to overclock on stock cooler. (You may want to overclock later on, It's to keep your options open). The ryzen has a lot of threads, making streaming available as well as editing.
Ryzen will be a cheaper and more flexible system, someone your age with a constant change of direction in your life, you'll benefit from this route more.
It is your choice in the end, I don't see much reason in the 8600 unless it's a k, 8500 may be a better $ value.
