Question Windows freeze and GPU 100%

Hello, I am speaking to you here because I have had a problem with my PC for several months, this problem generally occurs after several hours of use.
When this happens, my clock at the bottom right of my screen freezes and it is no longer possible to perform any actions on the operating system.

however with CTRL+ALT+DEL I can access the task manager, I see that on my GPU, 3D and COPY is at 100% everytime.

On the other hand, I have already tried to run a new task from the task manager (for example to open CMD because I cannot interact with the Windows search bar) and when I write CMD and click on "OK" nothing happens. I also already tried to "restart the process" for "windows file explorer" but that made the situation worse, the bar almost turned black and it was still not possible to interact with it.

I would like to point out that it is a desktop PC that has been working without problems for almost 5 years and that I built it myself. I would like to point out that I still have active monitoring and that the problem does not arise due to overheating. On the contrary, the problem often occurs when I leave a YouTube or Twitch video running and move away from the PC. When I come back it's freezing.
I clarified that it is not a heating problem, but I also cleaned all my fans, changed the thermal paste on my CPU and changed the CMOS battery as well, the problem is still there.
I have also already updated the driver for my graphics card, I will also do it for my motherboard.

Have you used DISM and SFC to ensure your OS is healthy?

Major drivers fully up to date (GPU, motherboard chipset, network)? Windows, too?

What, if anything, are you overclocking (CPU, GPU, memory)?

How old is the PSU? This seems like a potential heat and/or power issue on the surface.

GPU / Windows YES. I will do the others now.

Nope I also desactivate XMP profile.
How old is the PSU? This seems like a potential heat and/or power issue on the surface.
4/5 years I think. I launch a PSU test with " OCCT Power Supply Test" during 20 minutes, no problem, I should try 1 hour?
