I've been looking around for a tablet / touchscreen monitor i can use to display my home pc wirelessly I've found a few things close to what i was looking for
http://www.mimomonitors.com/
http://www.splashtop.com/splashtop2

But pretty much what i rlly want is somthing i can walk around the house with that pretty much only does what the splashtop software does and i'd like the features the mimo monitor has like the usb plugs so i can use somthing like a razor nostromo if i wanted http://www.razerzone.com/store/razer-nostromo

Pretty much somthing thats like this

But i'd prefer not to have to go play a grand for an apple ipad that im only going to use for one app and i've heard the app laggs a bit at times since its just software added on to the pad.

I've heard the HP touchpad does this exactly but i've only found it using android os not being a display for your home pc and i can't even find any website that has one in stock.

What happens if I try to find an inexpensive android tablet... put a mini cpu in my dash with wifi, hook the audio out to a modest amp and some speakers (or just rca in on a cheap non motorized stereo head unit)... and remote desktop to the cpu/hard drive? Do I get terrible lag if a passenger wanted to watch dvd or video? Could I easily bash together a custom panel of buttons(hot buttons for driving and gps stuff)? How could I make it "win" to use a cheap android tablet as the monitor for a simple media / communication / navigation center?

agree. The right technology is already there (WHDI from amimon) but no tablet with a WHDI receiver.
