Ah I see. I got excited to find i7 in budget. I found some custom builds with mid tower for 100$ But they are all with i5-6500, which will work. The others you suggested run around 120-150$ around here.

GT1030 will work, some arguments can be made as to go for a GTX750ti as well (slightly better performance/graphics -- but there isn't a huge difference between them, just suggestion another option)
couple of things to try here, Run a hardware monitor to see CPU/GPU/HDD usage, look if you can see a spike in usage in one of those components while this happens.

it's not worth it, simply because that CPU is struggling in most AAA games of today. The GPU is alright, but this guy seems to be asking too much, and I bet it's because of the GTX970 (or he looked up individual part prices and came up with his own)
the 8600k shouldn't struggle with the multi tasking that you are talking about. But I would strongly recommend as to NOT put a 212 cooler on that CPU, it's really not enough. the Evo 212 was great with 4 core CPUs, but it can hardly be of any good on the 6 core CPUs. I would suggest to go for...
ultimately it's your choice. the 8600k's 6cores will be plenty good for gaming and editing. Although I'm leaning towards the i7 for you, judging from your current setup. Another thing to consider is (since it seems that you are in your teens?), When will you be able to upgrade your PC next time...
an i5-8600k is a great CPU, but in the end the 8700k is still better. It's not as big of a leap from 8600 to 8700 but that's something that will show in a few years from now rather than today.
I would strongly suggest going waiting around for the new line of GPUs (which should work out fine...
i'm not too sure of what you mean by the connector comes out from video card (i do understand which part you're talking about). But if it works and it's secure after you put the screw in, then I dont think there's much of a problem.
