2TB 850 Evo SSD vs (2) 1TB Evo's

Amazon was selling the 2TB Evo @ $650 and now they seem to be sold out! Best Buy does have the 1TB on sale for $310 and I was wondering if I should just go ahead and get a couple of 1's..? Any speed difference with having 2 1tb's as opposed to a single drive? I hear that you can run raid arrays to somewhat boost performance, but also heard that their is hardly much of a difference running a raid vs no raid. I will mainly be gaming, and... well that is it. Any feedback would be appreciated. Coming from a 7200rpm black performance drive from WD.

Oh yeah man. My 2TB HDD is a little more than half full. I also take a lot of screenshots while playing games on Steam and that can take up quite a bit of space after a while.
 
Actually, I'm just going to buy the single 1TB and use that until it gets full, and I will just uninstall games that I don't play anymore and I will try and keep my fingers away from the F12 key. Thanks dude
