Here are the parts (i'm posting this thru my phone so i won't bother with the links. Parts i chose are popular enough for most people to know by name. ):

I5 2500k + gigabye ga-z68ma d2h b3 = 180 + 75 = $255 @ microcenter

Rosewill challenger or antec 300 = 50 & 60 respectively (still undecided which one, buy leaning on challenger?

Gskill ddr3 1600 8gb ram = 60

Samsung f3 1 tb = 60

Xfx core edition 550 = 70

CM hyper 212+ = 30

Dvd drive = 20

Windowa 7 = 100

Monitor = ??? need advice

Gpu = budget dependent

Total for now = 643 before tax and rebate

Approximate Purchase Date: preferably before august ends (for microcenter deal on 2500k. If not yhen by thanksgiving)
 
Budget Range: max of 1200 after tax, before rebate (preferably lower somewhere along 1100)
 
System Usage from Most to Least Important: gaming, browsing, skype chat
 
Parts Not Required: i need all. Including monitor preferably about 23-24" and at least 1900x180
 
Preferred Website(s) for Parts: newegg, microcenter, amazon and other reputable websites (please note i'm in california so i pay tax on newegg and microcenter, but amazon is tax free)
 
Country of Origin: united states
 
Parts Preferences: none as long as parts are of good quality. Doesn't have to be best, but at least decent.
 
Overclocking: Yes if cpu/mobo allows it
 
SLI or Crossfire: Yes (in the future) if mobo allows. Else i'll stay single card
 
Monitor Resolution: 1900 x 1080 or 1900 x 1200 (still has to buy)
 
Additional Comments:

-I know my build above does not include a gpu yet. With gpu i'm flexible, but minimum i want is a 6870. Of course more powerful is better, but only if budget allows for it.

-i may be able to get someone who's a student to get me a windows copy. (student price is $45 if i'm not mistaken)

-is that a smart mobo choice for me? Will it allow me to OC my cpu to at least 4ghz? If not, should i upgrade my mobo to something else or should i just downgrade to an i3-2100 or i5-2400?

-if OC is put of the picture (either due to mobo limitations or dropping down to a 2100/2400 cpu), then i won't need an aftermarket cooler. Correct?

-i think my psu is too much for a single gpu build, but i chose 550 watts so that if in the future i upgrade cards (for when 6970s/gtx570s drop down in price) i'm still covered.

-even though computer is for gaming, i'm not a hardcore gamer. But even though i'm not hardcore, i still want my games to run smoothly. Games i'm currently interested in are bf3, diablo3, sc2, counterstrike, medal of honor. (mostly shooters)

u have to decide what is that u looking for.

1st way

U get i-2100 and H67 and let say HD6950 2Gb
it will handle most of the games at high quality, although will lack in multithread programs but if u only plan on skype and browsing u will be good.
later on ivy bridge comes out and when it will get to a reasonable price u can upgrade ( i think by the end of next year). The only problem that u will not be able to overclock ur CPU which will save u on cooler

2nd way
u get Z68 or P67 mobo and i-2500k and let's say 6870
most of the games will run at high quality at 1920x1080 resolution but u might have to oc GPU.
U will most likely OC CPU as well depending on the choice of mobo u go far or not (cheaper Z68 will not let u go further...

Ps. Forgot to mention. Browsing typically comes with multitasking too. Typical session would be : 4-7 browser tabs + yahoo messenger + music thru itunes. I'd say i would be gaming 50% of the time and browsing the other 50%

Tax is 8.75% here, so just add 10% to the cost and it'll be close enough

 
I wouldn't recommend running dual cards on that mATX board. Here's some options to look at. 750w psu to power dual 560's or dual 560ti's.

Using why_me's suggestion. I came up with:

Case - $60
Antec 620w - $70
Asrock z68 - $138
2500k - $180
Hyper 212+ - $28
ram - $55
Hdd - $60
dvd - $20
6870 -$175

Roughly about $835 after tax. So i have max of $365 for windows, monitor, keyboard and mouse. Almost right up to my limit.

Do i really need a 2500k for my intended uses?(see op for uses)

I'm just concerned that i'm being driven more by my "wants" rather than what's practical.

@madchrmist that's exactly what i'm telling myself. Else, i would juat get an i3/h61 combo

@why_me can you check microcenter if they have good mobos there? They have a -$40 off promo for mobos when purchased with 2nd gen i3/i5/i7 processors.

u will need non-reference cooler like Cm hyper 212+ and extra fans in ur case
ivy bridge comes out and u can wait a little bit more and get K series ...i-2500k will last u for some time especially with OC

another thing to mention is PSU for 1st system u'll be fine with decent 600w as u will not OC much (also HD6950 2gb can be unlocked into 69700
for a second system i would go at least 650-700W as u will OC ur CPU and GPU (if u feel like it) also think about possible CF or SLi which will cost u extra

I have to admit i am a bit unsure as to what to get. It's because i "want" a 2500k but i'm having a hard time justifying the cost over a much cheaper i3/h67 solution. By going with i3 i can get a better gpu. The 2500k combo would last longer before it becomes too weak to run though, and gpu are easier to upgrade than cpu/mobo.
