Question Building computer for friend. Cpu/GPU advice?

I used to build pcs for friends all the time but haven't in about 8 years. This will be my first ryzen build. I suggested the 3600 during prime day sales with the few hours of research I was able to do. He kept wanting the 2700x probably because of the flashy advertising and all the cores. Is there an easy explanation you guys can give on differentiating all the ryzen cpu models? X vs non x? 3 vs 5 vs 7?etc

This will be a gaming pc. His first build ever. Will be alot of world of warcraft when classic releases and Hearthstone. Probably some shooters and dungeon crawlers eventually.

Budget =1000. If 2 monitors could be included into that, splendid. If not, no biggie.

So far we have 16 gigs ddr4 ram and a 500gb ssd for 90 bucks

***ALSO, is there something scary going on with ryzen mobos that I should know?

There's been some BIOS issues on the older gen Ryzen boards when using the 3rd gen and the X570 boards are too expensive at the moment so I'd go B450 with the Ryzen 2600.

WoW looks awesome on a 21:9 IPS screen, you can also use Feesync with Nvidia GPU's now, I'll link how-to below the build.
