My configuration is like this:

CPU: Intel(R) Core(TM) i7-3770K CPU @ 3.50GHz
RAM: 32GB
SSD: 128GB OCZ Vertex 4 + 3 x HDD's
MB: AsRock P67 Pro3
3 x Monitors

Also I got the chance to choose from 2 cards and 2 PSU's

Inno3D GeForce GTX 580 HAWK Edition 3GB vs SAPPHIRE HD 7970 3GB GDDR5

and

Chieftec Nitro 750W vs Seasonic SS-1250XM X-Series

The thing is that I have all of them, just want to choose the best configuration and sell the card and PSU that I wont use, so can't decide which ones is best to fit and which one is of best "quality".

Hi - The gtx 580 is 3-4 yrs old and the 7970 is 2 yrs old. Possibly consider selling both and investing
in a newer card card such as the gtx 970 which will outperform either and can be had for ~$240-$260 range.

Even tho there's no way you need the Seasonic X-1250, it is gold efficiency and should last for many yrs.
The Chieftec while not a bad PSU is a step down from the Seasonic. So, sell the Chieftec, or sell both PSU's
and get a new semi mod gold efficiency unit in the 650-750w range.

You will be able to upgrade and modernize your system and pocket some $ in the process.

Get the SAPPHIRE HD 7970 3GB GDDR5 or R9 280x.
GTX 580 is a way too old choice.

The 970 is a little more then that, low $300 range, but ToyFTW has made an excellent suggestion. If you don't sell the two cards and both PSU's, then the 7970/Seasonic is the good choice.
