Could i put Corsair AF red LED 120mm on a CM 212 evo?

Yeah, that would be fine. Would be a little bit better. It'll only be 3-pin though, unless you get the PWM version.

im installing one of either side so i would need something like this. Exhaust fan <--- fan1 heatsink <--- fan2 (<--- represents the direction the air should be flowing) is this correct?

Yeah that would be perfect Dual AF fans on the cooler will be great, and help the slight pressure decrease since the AF fans aren't pressure optimized. Dual fans should be noticeably better than the single fan that comes with it
