So there is PCIe and DIMM extensions, but why not a CPU extenstion?

Probably because there's not enough demand for anyone to make such a thing, what do we need it for? and how would you reliably mount a heatsink and fan to a floating CPU? Also I suspect the signals involved would not travel very far without degrading

There are multi-socket motherboards but the easiest way to accomplish the "extension" is to just get another CPU with more cores. What would be the point of a CPU "extension"?

Because there is no market for CPU extensions, no use for them. It would also probably be pretty expensive to develop a legitimate product.

Weren't early Pentiums on plugin riser boards?

yes the pentiums were on a daughter board. The 8086 and 80386 had a socket

those were like DIMMs. I remember when were less fragile than they are today
