i've been researching through internet and found i7 880 and xeon x3480 wondering what's different between them and which one is better to pick in gaming performance! - (send help)

Yep! Intel did this a few times in its history just taking a xeon and slapping a i-series model on it and stating that it specifically didn't come with an igpu.

Your fine with x3440 it has 4 core 8 threads, all of these are fully overclockable. I would avoid i7-880 and x3480 since those usually very expensive, go with i7-860 / i7-870 or one of the xeon series with 4c8t

The only difference between the i7 and the xeon is that the xeon is a more binned chip than the i7 so you dont have to crank the voltages too much for a good overclock, i would reccomend the x3440, 3450 and 3470 as those can be found for reasonable prices, i dont reccomend x3430 because it doesnt have hyperthreading.
