I was wondering which is better for gaming and also running programs and everyday use.
M.2 nvme SSD + HDD or just a SSHD?

SSD + HDD by far. SSHDs are just hard drives with a small DRAM cache. I have one and it's not much better than a regular hdd.

Alternatively, if your system supports it, Optane + HDD is a good way to present a single large volume if that's what you want.

I personally like my data separate from my OS/programs. Makes reformatting and stuff much easier.
