Whilst I don't disagree with you, there are cheaper options that will give roughly the same CPU resources. Ryzen 2600/3600 are good options too.

Sure, if you're aiming for 60 fps, but that's not the case here.

While a 2600/3600 has the same number of cores and threads as a 5600, they aren't nearly as good at gaming. If you want to hit over 100 fps consistently (which the OP has specifically said he does) only a Ryzen 5000 series CPU will get you there.

If I had a dollar for every time someone with a Ryzen 2600/3600 on this forum posted about unexpectedly low fps, I could buy a RTX 3080.

That's fine for the purpose of your argument, but hitting 100+fps in 'Fortnight' (which is the only thing the OP has specified!!) with a 3600 is not really an issue. Whilst you can get a bigger uplift with a 5600x, the OP does not need it. The 3600 will do fine.

Everyone else has great points and know alot more on every topic on here then me but there is a few things I can recommend. First I would like to mention I was running a I5 6500 with a RX 480 on Fortnite and hitting 144fps constantly. The problem with Fortnite optimisation is that they always try to get you to lower the settings as low as possible stressing the CPU more then the GPU, I would try setting the View Distance and Textures to the "Epic" setting and seeing how your results vary :)
